Ice Cream Filled Cupcakes

I made these cupcakes straight out of the pan, no cupcake liners. They were chocolate cupcakes filled with Double Chocolate Ice Cream...mmmm! =) Then topped off with Italian Meringue Buttercream (IMBC) and homemade sprinkles...some I covered in Betty Crocker's Chocolate Frosting...the good old ready made frosting haha well at least its delicious! It was also the first time I made IMBC, tricky but fun, and tasted AMAZING.


Oh yeah and I flaked some chocolate to sprinkle over the chocolate frosting!

Thanksgiving Cake

For thanksgiving I made a cake, great time for experimenting as this was my first buttercream cake! Inside was chocolate cake with vanilla buttercream filling and white vanilla buttercream on the outside as well and tinted vanilla for the decorations...didn't exactly turn out to be perfect and exactly as i wanted but...we live and learn!!and hey it's my first official CAKE WRECK! :) lol

Cupcake Stand

I also made this cupcake stand for my birthday party, it was chocolate cupcakes with vanilla buttercream. I didn't bake them, just icing them with a 1M swirl tip, and the golden cupcake wrappers are from Wilton (at Michael's..the best store ever ;P) lol.

Then I covered the edges with golden ribbon, fastened with tape and the bottom tier I just stapled some wrapping paper on.

Sugar Cookies...Vanilla, Chocolate and Marble


First time, I tried these, they turned out pretty well, i made this first batch for trial, then the second for EID



This is the recipe:
  • 1 cup unsalted butter, softened
  • 1 egg
  • 1 1/2 cups granulated sugar
  • 2 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon sal
  • 1 1/2 teaspoon of vanilla extract

In mixing bowl, cream butter with sugar until light and fluffy. Beat in egg and extracts. Mix flour, baking powder and salt; add to butter mixture 1 cup at a time, mixing after each addition.Divide dough into cover with plastic wrap and chill for atleast 1 day in an airtight container, and then defrost before rolling. Between two pieces of plastic or parchment paper roll out. (this prevents the dough going crumbly and sticking to your roller, because of smooth rolling be carefull no to get carried away too wquickly and then roll it too thin!) ( you want in crispy but soft-ish!) :)

Preheat oven to 400°F. Dip cookie cutter in flour before use, and then time to time. Bake cookies on cookie tray lined with parchment paper, for 6-7 minutes or until cookies are lightly browned (especially on the edges).

Yields about 36 or more cookies!

My Previous Cakes

The first 'proper' cake i ever made! :P Yes I made my own birthday cake lol. It turned out pretty well...exept for the fact the Wilton Fondant sucks! It tastes horrible, like rubber - not that I have tasted rubber, but you get the idea - also, it's pretty much a tough consistency(not in a good way). Although I should've left a little more space for the writing..

btw - its meant to be a necklace! just incase it looks a little vague!
